Резюме: In this dissertation we described a new effective method for spontaneous decrease of the drop size diameter of the emulsion droplets by consecutive cooling and heating of the emulsions in presence of the appropriate surfactants. It is established that the drop size decrease happens due to three different mechanisms. In the first mechanism drop breakage occurs due to the formation of an unstable thin oil film into the deformed alkane emulsion droplets upon their cooling. The second drop breakage mechanism is observed upon emulsion heating due to a capillary instability of the long alkane fibers extruded during the cooling process. The third mechanism is also observed upon emulsion heating and involves lipid crystal dewetting from its own melt. The specific requirements for the realization of the three different mechanisms are clarified and discussed. The efficiency of each of the mechanism is estimated, and it is shown that the third mechanism is most effective for drop size decrease of the largest drops in the examined emulsion samples. It is shown that the developed method can be applied also for bulk emulsions with high oil volume fraction of up to 50 vol. %. It is also shown that this method is applicable for emulsification of thermo-sensitive substances and has a possibility to form micrometer and submicrometer droplets after one to several freeze-thaw cycles.
