In this work, we have identified the species and strains of isolated lactic acid bacteria and different bifidobacteria, which display a variety of probiotic properties: good adhesion, release of bioactive ACE-inhibitory peptides, cholesterol reducing activity and antioxidant activity. We have shown that the intestinal strains L. plantarum P12 and L. gasseri G4/13 as well as the strain L. helveticus AC, which has been isolated from diary products, display a high adhesion potential to epithelial cell lines. The adhesive factors in this strains are cell-surface proteins. The strains L. plantarum P12 and L. gasseri G4/13 prevent the adhesion of pathogenic strains (E. coli and S. typhimurium) in a direct competition adhesion assay and demonstrate the ability to displace previously attached pathogens. In both these studies, L. gasseri G4/13 has shown a more pronounced effect in comparison to L. plantarum P12. In addition, L. plantarum P12 has an antioxidant activity and can survive when cultivated under laboratory conditions resembling the human gastro-intestinal system. Furthermore, L. plantarum P12 has good technological properties and can be easily cultivated in a bioreactor, reaching a high number of living cells (above 1010 CFU/ml) and remain viable after lyophilization. The cheese, prepared with this starter, has a high content of biologically active peptides, among which some display ACE- inhibiting activity.
